Tennessean: Greenery Co. brings healthy fast-casual eats to Hillsboro Village on Dec. 8

Caroline Gaston and Whitney Abblitt fell in love with Nashville as undergrads at Vanderbilt University. It wasn't until Gaston moved up north that the two sisters realized one area where Music City was lacking.

"When I was in New York and Whitney was in Nashville, I was gloating about all of the fast, healthy options I had in the city," Gaston said. "Whitney was like, 'Why are none of those things here?'"

With Greenery Co., a fast-casual restaurant focusing on healthy lunch options like bowls and salads, the sisters hope to change that. The Hillsboro Village restaurant, located at 1705 21st Ave. S., will open its doors on Tuesday, Dec. 8. The initial opening will be takeout only, but the restaurant plans to open to dine-in customers on Monday, Jan. 4.

"We're really just excited to open because this is the food Whitney and I have been looking for," Gaston said.

The restaurant promises "no microwaves, no freezers and no fryers" and aims to make it easier to eat healthy meals. Guests can choose from options like the falafel and quinoa-based Music City Med Bowl or the blackened shrimp Tennessee Thai Salad, or they can make their own meal from a variety of housemade dressings and locally-sourced ingredients. For midday snacks, guests can grab housemade items like carrot pimento cheese or French onion dip.
