Eater Nashville: Fast Casual Greenery Co. Opens Soon, Bringing Takeout Salads to Hillsboro Village
Once open, the new restaurant will offer free delivery to designated drop sites within Vanderbilt University Medical Center for area medical professionals.
In light of the recent spike in COVID-19 cases throughout Tennessee, Hillsboro Village’s new fast-casual, health-focused spot Greenery Co. is rolling out a phased opening, beginning on December 8. At first, Greenery Co. will operate in a takeout-only model, with plans to open to dine-in customers on January 4, 2021.
Co-owned by sisters and industry newcomers Caroline Gaston and Whitney Abblitt, Greenery Co. takes over the old Provence Breads & Cafe space right in the thick of Hillsboro Village. The Provence space at 1705 21st Avenue South was dear to the sisters in its former life, as the sisters spent plenty of time there as students at Vanderbilt. The two noticed a lack of healthy restaurant options in Nashville, and the idea for Greenery Co. was born.
On the menu (developed by Austin-based chef Barclay Stratton), find a selection of locally sourced snacks, salads, warm bowls, and sweet treats, alongside a variety of nonalcoholic drinks.
Diners can choose from their preordained selections like the Music City Med bowl, with carrot falafel, quinoa, chickpeas, and more in a preserved lemon vinaigrette, or a Tennessee Thai salad with blackened shrimp. Diners can also design their own healthy adventure, beginning with quinoa, rice, or spring mix, then top them with protein options like seared steak, roasted or crispy chicken, or carrot falafel. Then, dress them up to taste with an array of dressings and toppings.
Other seasonal menu items include carrot pimento cheese or French onion dip with crackers; roasted carrot soup with orange, yogurt, and toasted almond; and soup with chili cauliflower florets. There are also kid-friendly options available, too, plus triple chocolate chip cookies for dessert.
During the take-out-only phase of opening, guests will be able to pick up online orderscurbside at the front of the restaurant by parking in the allocated spaces on 21st Avenue South, or enter the restaurant through the front door to access the pick-up area.
Of note: the parking lot behind Greenery Co. offers 14 spots for its diners – a rarity in the Hillsboro Village neighborhood. And beginning on December 8, the restaurant will offer free delivery to designated drop sites within Vanderbilt University Medical Center for area medical professionals.
As employers, the sisters say their priority is fostering a healthy work environment, with personal and professional development options for team members. Guest speakers will cover topics like finance skills, customer service management, and enhanced food safety education.
Abblitt says “Caroline and I have both had past experiences of facing adversity in the workplace and feeling unsupported by employers, so we want to break that cycle and become a resource to our staff no matter what they need. We see this as an opportunity to create a positive atmosphere for our teammates from day one.”
To start, Greenery Co. will be open for takeout only, from 11.am. to 9 p.m. daily.
